2 Way Chicken Fajitas

If you love Slow Cooker Salsa Chicken, then you are really going to love these Chicken Fajitas! I make them 2 different ways depending on how much time I have in the morning! If I have 10 minutes to spare, I will cook my chicken fajitas, but if I am running late I will cook my 1 pan chicken fajitas! Both are super delicious and fulfill my taco cravings! I make some sort of taco, enchiladas or fajitas at least once a week for dinner or for my lunch meal prep! I am so excited to share these yummy recipes with you! I hope these quick and amazing recipes save you time making dinner and gives you a little more time to relax! 🙂

Below I will walk you through the 2 recipes! The recipes start off the same and then after have a couple different steps! I will walk you through both and then at the very end include the recipes separately!

Recipes for Slow Cooker Fajitas & 1 Pan Fajitas!

Ingredients:

Slow Cooker Fajita: chicken breasts, chopped peppers (I used 1 red, 1 yellow and 1 green), 1/2 onion sliced, fajita seasoning (I use McCormick fajita or taco seasoning), 1/2 jar of salsa, your favorite taco toppings

1 Pan Fajitas: chicken breasts, chopped peppers (I used 1 red, 1 yellow and 1 green), 1/2 onion sliced, fajita seasoning (I use McCormick fajita or taco seasoning), your favorite taco toppings

Directions: 

For both recipes put onions and peppers in your slow cooker or your pan!

Tips:

Slow Cooker: Spray your Slow Cooker with cooking spray prior to putting ingredients in, it makes for easy clean up!

1 Pan: Put aluminum foil on the pan and spray with cooking spray!

The easier the clean up the better, right?

Next up, the seasoning!

Slow Cooker: Cut slices across your chicken (about half way into the chicken) and then rub your fajita seasoning in the slits and all over the chicken!

1 Pan Fajitas: Cut your chicken into small pieces. In a small bowl mix your chicken pieces with fajita seasoning.

Slow Cooker: Pour salsa over the chicken. Then turn on your Slow Cooker and cook on high for 4 hours!

1 Pan: Pour chicken over the onions and peppers on the pan. Cook in oven at 400 degrees for 25 minutes (or until your chicken is cooked)

Slow Cooker: Once your chicken is done cooking shred the chicken using forks. If there is an abundance of juices in the Slow Cooker, pour some of it out (use mittens!). Mix your chicken back into the pot with all of your peppers.

Then serve with tortillas and your favorite toppings!

1 Pan: Take your chicken out of the oven.

Serve your chicken, peppers and onions with tortillas and your favorite toppings!

I like to cook both of these recipes for dinner, but the best part is that they both serve as great meal prep for lunches (and left overs!). They both taste great alone with some toppings (i.e. cheese, lettuce, tomatoes, etc).
