In my Irish family, we are all about St. Patrick’s Day! Ever since I was little we celebrated St. Patrick’s Day with the Southside Irish Parade, eating corn beef and cabbage and Irish music. Growing up I was even a competitive Irish dancer! Yes, I did the jig!
My inspiration for this yummy boozy shamrock shake is based off of my frequent consumption of McDonald’s Shamrock Shakes all throughout March. I am obsessed and I cannot lie about my Shamrock Shake addiction! HA! J They are so delicious.
My recipe stems from my favorite things! It is even better because it is only 3 ingredients, am I right? I love using Edy’s Mint Chocolate Chip ice cream because it already has the mint flavor (and chocolate chips +BONUS!). I grew up eating Edy’s Mint Chocolate Chip ice cream because of my dad. It was always my dad’s favorite ice cream so naturally as a little kid I wanted to eat it too! Now it has grown to be one of my favorite ice cream flavors! Another one of our family favorites is Bailey’s Coffee Liquor! I like Bailey’s on ice, in my coffee or even in icing for cupcakes! I love Bailey’s in almost any form! Bailey’s was the perfect fit to this yummy boozy shamrock shake!

- 4 scoops of Edy’s Mint Chocolate Ice Cream
- 2 oz Bailey’s Coffee Liquor
- ½ cup of milk (I used 1%)
- Toppings: Whipped cream and sprinkles
- In a blender add ice cream, Bailey’s and milk
- Blend until it is a “Shake” consistency
- Add more milk if needed
- Top with whipped cream and sprinkles
