Breakfast for Dinner

Calling all breakfast lovers! Nothing beats whipping up a hearty breakfast… for dinner. Check out this HEALTHY, EASY, DELICIOUS recipe for breakfast sweet potatoes and ground turkey sausage.

Prep Time: 10-15 minutes

Cook Time: 20-25 minutes

Total Time: 20-35- minutes

Ingredients:

2-4 eggs

1 bell pepper – diced

1 sweet potato – diced

1/8 tsp garlic powder

1/8 tsp black pepper

1/3 tsp salt

1/4 tsp dried sage

1 lb ground turkey meat (may substitute pork or chicken)

1/4 cup diced white onion

3 tablespoons ghee butter (may substitute other cooking fat)

Directions:

Preheat oven to 350 degrees F

Line large baking sheet with parchment paper

Heat 1 tbs ghee butter in skillet and add onion

Cook onion for 2-4 minutes

Transfer cooked onion to mixing bowl. Add meat, sage, salt, pepper, garlic powder.

Mix meat mixture and break into equal sized patties

Add more ghee butter to skillet and add sweet potatoes for 5 minutes

Add bell peppers after 5 minutes

Remove sweet potatoes and bell peppers from skillet, spread evenly onto baking sheet

Bake in oven for 5 minutes

Cook sausage patties on skillet until both sides are brown

Remove sausage patties from skillet and place on baking sheet with sweet potatoes

Bake both until the sausage is no longer pink in the middle and the sweet potatoes are “fork tender”

Whip up some eggs & Enjoy!
