Crock Pot Buffalo Chicken

Simple. Fast. Delicious….. and….. HEALTHY! Check out this buffalo crock pot dinner. It’s a great meal to kick off your week. It’s a healthy recipe that fills up the whole family AND there’s usually leftovers if you want a little something to bring to work the following day. I’m usually not big on buffalo sauce/ spice but for this recipe, I make an exception.

Ingredients:

1.5 lbs boneless skinless chicken breast

1/2 cup hot pepper sauce (I used Frank’s Red Hot)

2 tbsp ghee butter

1 tbsp coconut aminos

1/2 tsp garlic powder

1/4 tsp cayenne

4-6 small sweet potatoes  (to be cooked in oven)

ranch dressing

Directions:

1.Prep & place chicken in crock pot

2. In sauce pan, combine hot sauce, ghee, coconut aminos, garlic powder, cayene

(I do this the night before and store it in the fridge until I prep my meal in the morning, this is a time saver)

3.Stir & melt mixture

4.Pour sauce in slow cooker

5.Cook on LOW for 6 hours

6.Remove chicken and shred

7.Add more sauce (as needed)

8.Serve chicken with baked sweet potato- top with ranch as desired

(Cook sweet potatoes in oven at 400 F for 1 hour)
