I am always a big fan of crock pot chili but this recipe blows all the rest away! Who would have thought that sweet potatoes and chili would be a delicious combination? It adds so much flavor to the chili and makes your house smell amazing while it’s busy cooking. Try this recipe out for a little spin on your average turkey chili.
1.5 lbs lean ground turkey
1- 15 oz. can black beans (drained and rinsed)
2 cloves garlic
1/2 tsp dried oregano
2 medium sweet potatoes
1-28 oz can diced tomatoes
1 yellow onion
2.5 cups chicken stock (low sodium)
1 cup UNCOOKED quinoa
1/2 tsp black pepper
1.5 tsp chili powder
1/2 tsp sea salt
1 tbsp olive oil or ghee butter
1.5 tsp ground cumin
1.Heat olive oil or ghee in large skillet
2.Add ground turkey, chopped onion, salt, garlic, black pepper, chili powder
3. Cook until meat is cooked through and add all to crock pot
4. Top off the meat mixture with sweet potatoes, uncooked quinoa, tomatoes, black beans.
5. Cook for 5-6 hours depending on setting on crock pot
6. Enjoy and top with sour cream, cilantro, or tortilla chops!
