Crockpot Corned Beef Hash

One of my favorite things in March is CORNED BEEF!! I grew up having corned beef and cabbage at LEAST once a year and it is one of my favorite dinners! Now don’t be fooled, you can have corned beef anytime of year! 🙂 A typical dinner for my Irish family on St. Patrick’s Day consists of sliced corned beef, cabbage, carrots and potatoes! IT IS SO GOOD! Add Irish Soda Bread to the mix and some Bailey’s and you have yourself a yummy meal!

After you eat your delicious corned beef dinner save the leftovers for this delicious crock pot corned beef hash! There is nothing better than creamy and delicious corned beef hash to kick off your weekend! The combination of corned beef, green peppers, hash browns and creamy soup is DELICIOUS! Crockpot Corned Beef Hash

Crockpot Corned Beef Hash


  • 1 bag frozen hash browns
  • 1 Green Pepper diced
  • 1 onion diced
  • 1/2 pound of sliced leftover corned beef or deli corned beef
  • Salt to taste
  • Pepper to taste
  • Cream of chicken soup
  • 1 cup of milk
  • 1 Bag of shredded cheese


  1. Spray your Crock pot with cooking spray
  2. Put 1/3 of the ingredients into the Crock pot: hash browns, green peppers, onions, corn beef, salt, pepper and cheddar cheese
  3. Repeat step #2 two times (make 3 layers)
  4. In a small bowl mix the cream of chicken soup and the milk. Then pour the contents over your layers in the Crock pot
  5. Let cook on high for 3-4 hours
  6. ENJOY!
