Grillin Up Veggies

What's on the Grill-

These grilled veggies will take your next BBQ to the next level! Have I mentioned I LOVE TO BBQ? I will be grilling all summer! So check out what I have been grilling so far this summer in terms of veggies!

For our BBQ I decided to make:

Grilled Caesar Salad

Grilled Asparagus

Grilled Mixed Veggies

Grilled Ceasar Salad (1)

Grilled Caesar Salad sounds pretty crazy right? Grilled lettuce? Well let me tell you, it is so crisp, warm, crunchy and delicious! When my neighbor first mentioned this phenomenon of grilling lettuce, I knew it was something I had to try! Lettuce cooks so fast on the grill and is an easy 10 minute meal! A great addition to this lettuce would be to grill up some chicken breasts and make it a Chicken Caesar Salad. Yummy!

Ingredients: Romaine Lettuce (cut them in half), Kraft Caesar Salad Dressing, shaved Parmesan

Additional Ingredients you might enjoy: chicken breasts, croutons

Directions:

1. Wash your lettuce! I prefer to buy the prepackaged lettuce that comes in a pack of 3, however a head of lettuce will work great to!

2. Slice your lettuce in half

3. Throw the lettuce on the grill face down

4. Let the lettuce cook for about 2-3 minutes on each side. The lettuce cooks really fast! I like to get the grill marks on both sides and really let the lettuce crisp up.

5. Take the lettuce off of the grill and let it cool for a couple of minutes. photo 4 (4)

6. Chop up your lettuce (or leave it as a whole if you want to serve it that way)

7. Place chopped lettuce in a bowl and add your sides and dressing!

Grilled Asparagus

The grilled asparagus was super easy and it tastes SO delicious!! All you need is a salt, pepper, garlic powder and olive oil!

4 Step Directions:

  1. Take your washed asparagus and drizzle them with olive oil.
  2. Sprinkle the asparagus with garlic powder, salt and pepper
  3. Place the seasoned asparagus on the top rack of your grill. Leave them on the grill for about 10 minutes
  4. Let them cool and enjoy!

Grilled Mixed Veggies

If you thought the asparagus was easy, then wait until you try out these grilled veggies!! Just pick your favorite seasonal veggies! I grilled zucchini, peppers and onions! All you need are your veggies, olive oil, salt, pepper and a grill pan (to prevent your yummy veggies from falling through the grill).

Directions:

  1. Wash and chop up your veggies
  2. Drizzle your chopped veggies with olive oil
  3. Sprinkle the veggies with salt and pepper
  4. Place on your grill pan and put them on your pre-heated grill
  5. Cook for about 10 minutes, mix them every couple minutes
  6. Let them cool and enjoy!
