I have been making salsa chicken for months maybe years as a lunch meal prep for the week and sometimes for dinner……until I decided to attempt Balsamic Chicken! YUM! I mean – don’t get me wrong – I LOVE my salsa chicken, but sometimes a change is good! Mix it up!
Balsamic Vinaigrette Chicken is really simple to make. It literally takes less that 5 minutes to prep this chicken in the morning. When I come home the house smells SO good and I get really pumped for dinner! It is so great to have simple recipes that I can pop in the Slow Cooker in the morning and come home to a warm freshly cooked meal. There is not better feeling than when you are at work NOT thinking about having to cook dinner when you get home. AHHH what are you going to do with all of that extra time later?
I also love that this meal is so diverse! I eat it for lunch and dinner! Here are 5 ways you can use this yummy chicken throughout the week:
Make a salad! Throw some lettuce, spinach, cheese, veggies and croutons on there and you have a delicious and nutritious lunch! The best part is – you don’t need dressing!
Wrap it up! Add your chicken to a warm flour tortilla then add some cheese, lettuce and veggies and you have yourself a yummy wrap!
Chicken Sliders! Add your shredded chicken to a hamburger bun (preferably Hawaiian rolls – yum!) and you have yourself the perfect sandwich!
Add some veggies on the side! This Balsamic Chicken tastes REALLY good on its own! Add some steamed veggies on the side (or mix it in) and you are good to go!
Make a Balsamic Stir Fry! Add your chicken on cooked white or brown rice and add some veggies!
SO MEAL PREP….
A lot of the recipes listed above are really tasty for lunch and dinner! So here comes my blurb about MEAL PREP! Yes, MEAL PREP! Sounds so daunting right? Like, who wants to spend alllllll Sunday prepping meals for the weak? Well, guess what? I spend less that an hour prepping for the week! (This does not include grocery shopping). By prepping on Sunday, I save so much time in the morning! Since I no longer have to worry about prepping a lunch, I take 10 minutes to prep a Slow Cooker recipe, throw my lunch in my bag, make a cup of coffee and hit the road! It is SOOOOO easy and totally worth the hour of prep on Sunday. So to prep this I just throw my Balsamic Viniagrette Chicken in the Slow Cooker on Sunday and go about my normal routine. When it is done I shred it and put it in my meal prep containers (I bought these containers on Amazon). They are perfect for putting my veggies and chicken in! Happy prepping!

- 3 Chicken Breasts
- 1 1/2 Cups of Balsamic Vinaigrette Dressing
- 1 1/2 Tbsp Brown Sugar
- 3 Cloves Minced Garlic
- Season chicken breasts with salt and pepper on both sides then place them in your slow cooker
- In a bowl mix Balsamic Vinaigrette Dressing, brown sugar and garlic in a bowl
- Pour mix over chicken in slow cooker. Cover all of the chicken in mix.
- Cook on high for 4 hours or low for 6 hours
- When finished cooking, take out and shred chicken with forks. Put chicken back into slow cooker and mix with dressing left in the slow cooker (do not dump any of the dressing out!).
