Whole 30 White Chicken Chili

Check out this Whole 30 white chicken chili. This recipe is one of those quick crock pot meals you can prep the night before and toss in the slow cooker before you begin your day.

 

Ingredients:

2 lbs chicken breasts

2 large Japanese sweet potatoes (peeled and chopped into chunks) – – available at Whole Foods

2 cups sugar free chicken broth/ stock

4 oz can diced green chiles

3 chopped jalapeños

1/4 tsp black pepper

1/4 tsp salt

1 tsp oregano

2 tsp cumin

1/2 tsp chili powder

1/4 tsp cayenne pepper (this add the spice)

1 yellow onion- – diced

2 cloves garlic- – chopped

1 tbsp ghee butter

1 tbsp lime juice

1/2 cup coconut cream (sugar free)

arrowroot starch- – add as needed to thicken chili

Directions:

Do the following the night before & store in fridge until morning:

1.Chop sweet potato

2. Chop onion

3. Chop jalapeños

– – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – – –  – – – – – – – – – –

1. Place chicken in crock pot

2.Top with sweet potatoes, green chilis, jalapeño, onion, chicken broth,

black pepper, salt, oregano, cumin, chili powder, cayenne pepper

3. Mix together & Cook on low for 6- 8 hours.

4. Remove chicken, shred

5. Add coconut cream, ghee, and lime juice- – Add arrowroot starch to thicken if desired

– let cook on high for 30 minutes WITHOUT chicken

6. Add shredded chicken back into chili

7. Top with jalapeño slices and cilantro if desired

8.Enjoy!
